The Route 83 Classic XL 13-inch Brisket Carving Knife is handcrafted for slicing brisket, roasts and other large cuts of meat. Its extra-long blade produces clean, even slices with fewer strokes, helping preserve the texture and presentation of the meat. The considered blade shape, balanced weight and generous handle provide accuracy, comfort and control during preparation and serving.
 
The blade is made from high-quality German 1.4116 stainless steel and heat-treated to HRC 56–58. This steel is selected for its durability, corrosion resistance and dependable edge performance. Its practical hardness provides a considered balance of sharpness, edge retention and resilience during regular use. Hand-hammered detailing gives the blade its distinctive character while helping food release during slicing.
 
The solid natural wood handle is individually selected, shaped and finished by hand. Its multidimensional form creates a natural grip between the first and second fingers, providing comfort and control. Natural variations in grain and colour give each handle its own distinctive character.
 
A stainless-steel end cap adds strength and acts as a counterweight, contributing to the knife’s considered balance from handle to blade. Three-quarter tang construction provides strength and stability without unnecessary handle weight. Care
Hand wash with warm water and mild detergent, then dry immediately. Do not soak the knife or place it in a dishwasher. To preserve the natural wood, occasionally apply an equal blend of olive oil and white vinegar.
